As part of compliance with HACCP requirements, processors need to identify critical control points (CCPs) as well as areas within their production facilities that could lead to product contamination or failure.

The stainless steel surfaces in the production area should be inspected regularly, searching for areas of biofilm and bacterial growth caused by poor cleaning techniques, such as spray ball faults, which can occur at any time during production or during CIP cleaning. These areas may cause product contamination at any time, so examination should be performed frequently.

This equipment allows the processor to see biofilms in real time, enabling them to take swabs of the area to accurately identify bacteria counts.

In addition to detecting proteins shells around bacteria, Bactiscan is designed to identify and isolate biofilms that are not visible with U.V., as evidenced by validation documentation provided by Campden BRI, the world leader in food safety standards and technology.

In our experience, some biofilms are hidden behind a glass-like surface caused by chemical hardening and continuous washing; hence, they are not detected when swabs are taken. Bactiscan can highlight these areas, but abrasive work must be done to remove the biofilm, in order to identify and quantify the  bacteria. During production, these biofilms may become loose and release bacteria into the product, resulting in major contamination.

Ideally, you should isolate a line and scan all areas within that line, so that you cover all surfaces that come into contact with products. As an example, we recently checked a sterile water vessel that was the last item to be examined after searching for contamination. There were obvious biofilms on the vessel that leaked into the final rinse before the line was filled with product, contaminating the entire line.
